How does your Gmail account act like POP? Do you see all the folders
from webmail? If not, you have configure it wrong. Delete and
recreate the account in Apple mail. When given choice of protocol,
select IMAP.
It says it is an IMAP, but all the messages I have deleted etc. all
remain on the server regardless. An Apple tech realized it when we
were working on a public computer and said I needed to reconfigure it
but nothing has worked, so I will take your advice and start over.

The best IMAP client to use on a Mac is either Thunderbird or
Entourage, not Apple Mail. Also set the root folder to [Gmail]. With
these I can delete a messsage from the inbox and it will also delete
it from all mail and appear in the trash.
