Subject: Fetching sent mail from smtp
The answer to this question may be that it cannot be done, but I feel
the need to ask.  What I am seeking is a way to have Gmail fetch email
that has been sent from an smtp connection (in this case my iPhone).
I have tried using the recent: prefix but that will only fetch mail
that has been sent through the email interface.

Any help would be much appreciated.

Gmail fetch uses on POP access.  POP can only fetch from Inbox folder.

Really?  There is no way around that?  My ultimate goal is just to
have my Gmail account and iPhone to be synced at all times.  And
messages sent from my iPhone to appear in my sent folder on my Gmail
account.

If you use "recent:", it downloads all mail sent and received in the
last thirty days, whether from the web or through Gmail SMTP.

Far better, if you want everything synchronised, would be to set up
IMAP access from the iPhone:

Thanks for the tip, I think that will fix my problem.  I am currently
using IMAP but have multiple email accounts so I am trying to keep
them all managed through the Gmail interface.  So I have some email
being downloaded via POP into my Gmail account which is then synced to
my iPhone via IMAP.
